I have no clue what has gotten into me lately but I have started to make colorful cocktails every time I end up hosting a house party. Probably it has something to do with how monotonous our lives have been since the pandemic and this pop of colors is a vivid reminder to snap out of that zone and spread your wings.

Prep Time : 3 minutes | Assemble time: 1 minutes| Serves : 1 large glass

Ingredients:

  • 60 mL White Rum (2 oz)
  • 37 mL Blue Curacao (1.25 oz)
  • 37 mL Cream of Coconut (1.25 oz)
  • 60 mL Pineapple Juice (2 oz)

Garnishes:

  • Pineapple Wedge
  • Maraschino Cherry
  • Umbrella for decor

Method:

  • Combine all the ingredients in the cocktail shaker and shake it well.
  • Fill your large cocktail glass with crushed ice.
  • Strain the mixture from the cocktail shaker over the crushed ice in the glass.
  • Garnish the glass with a pineapple wedge and a maraschino cherry.
  • Add some contrasting vibrant straws to the glass and clink clink.

Tips & Recommendations :

  • A coconut flavored rum can be substituted for the white rum.
  • Since we are already adding the cream of coconut, I stick with the white rum to avoid an overdose of coconut.
  • Cream of coconut and coconut cream are two completely different ingredients. Please use a tin of cream of coconut. Do not substitute it with anything else or the drink will fall flat. I used Coco López brand (Available in Walmart and Total Wine).
  • The tin tends to seperate the water and cream of coconut. So make sure to scoop out all the contents from the tin and blend it finely using a blender for a smooth creamy texture.
